Bachelors and college students have been having pizza for breakfast for years. But their pizzas are usually last night's leftovers: cold, oily-hardened slabs that are uninviting in almost every way. But you can have a pizza for breakfast that is suited to morning and pleasing to your eyes, nose, and mouth!
A Breakfast Pizza is a great dish to start off the morning with. It's special enough to serve for company or just a fun way to begin a weekend. And as with any pizza, you can tailor the toppings to suit your tastes! Check the Cooking Tips below for more ideas.
Ingredients
- 1 package (24 oz) of frozen shredded hashbrowns, thawed
- 8 eggs, divided
- 1/2 cup of milk
- Salt and pepper to taste
- Handful of cooked and crumbled bacon
- Handful of chopped green peppers
- Handful of diced tomatoes
- Handful of chopped cooked ham
- Half a handful of chopped green onions
- 1 cup of shredded cheddar cheese
Procedure
Heat overn to 400 degrees. In a large bowl, combine the shredded hashbrowns, one egg, and salt and pepper. Next, spray cooking oil on a pizza pan. Spread the shredded hashbrown mixture evenly on the pan, but make the edges slightly higher for the "crust". Bake the shredded hashbrown mixture on the pizza tray in the oven for 20 minutes. While the crust is baking, crack the remaining eggs into a bowl and whisk it together with the 1/2 cup of milk and a little more salt and pepper to taste. When the crust has baked for 20 minutes, remove it from the oven and pour the egg mixture onto the hashbrowns. Cover it evenly. Next, scatter the bacon, green peppers, tomatoes, ham, and green onions around the crust. Top the "pizza" with the shredded cheese. Return the pan to the oven and bake for 10 more minutes. When finished, cut the pizza with your pizza roller in wedge shapes and serve. One Breakfast Pizza serves 8 adults.
